This is almost idiot proof smoking...

Recently purchased one of these and I can't believe how happy I am with it. MOSTLY I was worried about controlling the temperature but this unit is so easy to control the temperature. First, google "the Minion method" for lighting your WSM. I've been using this method and it's been working PERFECTLY. I use hardwood lump coal...this has the best taste, healthier, and seems to burn so evenly. I filled up the charcoal bottom, then light about 1/3rd a chimney coal starter. When that chimney of coal is good and hot you just spread it over the UNLIT coal you filled your WSM with. Immediately put your filled water pan, meat, etc. in your WSM. Make sure initially your top vent is fully open as well as your bottom vents fully open. As soon as your smoker reaches 200 degrees, close the 3 bottom vents until they are about 1/3rd open. The unit will climb to about 225 steady, and it's easy to control your temperature from there. Want to run hotter, open the vents up some. I've been able to keep the temperature steady for 10 hours straight so far.
NOTE: You always leave your top vent completely open.
So far our burgers, chicken, and corn have been perfect, and we enjoyed the best ribs I've ever made. This unit is awesome. We love it.

Had other smokers. This one is the best. Easy heat and smoke control. Can convert to a small charcoal grill.
