Sweet and Tangy Pork Chops Recipe Ingredients:
1 and 1/2 cup unfiltered apple juice
1 cup KC Masterpiece Sweet and Tangy Barbecue Sauce
1 clove pressed garlic
4 thin cut pork chops
1 Pound fresh sweet potatoes, cleaned into wedges
1 Fuji or Pippin apple, remove the core when cutting into slices
1 red onion, peeled and cut slices
This recipe was initially made with fruit and vegetable kabobs, but we discovered that by saving time you could grill with other foods. The apples and onions were grilled evenly when sliced compared to when placed on a skewer.

Ingredients: 4 Large Vidalia Onions, 1/4 cup butter, 4 cloves of garlic, salt and pepper if desired.
Peel the onions and cut each one into quarters, keeping onions together. Place 1 tablespoon of butter and 1 clove of garlic in the middle of each onion. Double wrap each onion in foil and place on hot coals. Cook for 30 - 40 minutes. Carefully remove from the coals and unwrap. Season with salt and pepper - eat them while hot - um good. Also serve with ranch dip or hot sauce.

Ingredients: fresh trout (any kind), 1 tablespoon butter, salt, pepper, 1 small sliced onion

Clean the fish, leaving the fish whole, stuff the insides with butter, salt and pepper and all the onions you can fit. Place the stuffed trout on buttered foil and wrap up. Place over fire or on grill for 7 to 10 minutes. Remove from the fire/grill, open the foil pack, peel the skin off and eat.
Fried Potatoes Recipe
Prep Time: 20 Minutes
Ingredients: sliced potatoes for 4 people, 1 large onion sliced, 6 slices of bacon (sounds good already), salt and pepper
Roll out 2 sheets of aluminum foil to hold the mound of potatoes. Lay 3 slices of bacon long ways on the foil, layer potatoes and onions, then for the last layer lay 3 slices of bacon on top. Salt and pepper each layer as you desire. Roll out two more sheets of foil unless you are using heavy duty foil and lay over the potatoes and all four sides, roll the foil up tight. you can turn the foil over when you think one side is done (about halfway 10 minutes). Lay foil pack on the grill or over charcoal and cook for 20 minutes, turning occasionally. When the potatoes are tender unfold the foil, scoop out on to a plate and enjoy.
Hamburger Casserole Recipe
Prep Time: 1 Hour
Ingredients: 4 large potatoes sliced, 1 bag frozen mixed veggies, 2 pounds lean hamburger uncooked, 1 large onion chopped, salt, pepper, 2 cans mushroom soup
Layer the ingredients in order given onto a foil roasting pan. You can just break the hamburger up and spread it evenly over the veggies. Cover the pan with foil. Put it in the oven, on the grill or over coals. Cook until the hamburger is done in about 45 minutes to an hour. Serves about 4 to 6 people.

Prep Time: 1 hour and 15 minutes
Ingredients: 1 large head of cabbage cut into 1" inch pieces, 1 pound smoked sausage cut into 1/4 inch pieces, 1 diced onion, 1 diced bell pepper, 5 large potatoes cut into 1" slices, 2 large carrots cut into 1/4 inche pieces, 1 stick of butter, 6 slices of american cheese, salt and pepper
Combine all the ingredients and wrap into a large sheet of aluminum foil or use a foil pan. Fold all the ends to seal it and place on a rack over medium heat for hour or until tender. Serves about 6 to 10 people.
Chicken Fajitas Recipe
Prep Time: 10 minutes
Ingredients: 3 pounds of grilled chicken, 2 bell (1 red 1 green) peppers sliced, 2 sliced onions, 1 package of fajita seasoning or mix your own, 12 tortillas, aluminum foil
Make desired amount of foil pouches and inside of each one put a handful of peppers, chicken and onion. Make fajita mix in a bowl and when dissolved pour equally into the foil packs. Seal them tight so they don't leak and place over hot coals or on the grill. Serve with the tortillas when done. Serves about 10 to 12 people.

Prep Time: 15 minutes
Ingredients: 3 or 4 apples, shelled walnuts, butter or maple syrup.
Cut apples into slices and take out the core. Place apples on the aluminum foil, add walnuts and the syrup. Fold the foil leaving an opening for ventilation. Place on the fire or grill and let cook at least 45 minutes or until the apples are soft. Serves about 4 (1 per apple).

2 cups tomato ketchup ½ cup minced onion 1/4 cup white wine vinegar 1/8 cup molasses 4 tablespoons brown sugar 2 tablespoons mustard 2 teaspoons Liquid Smoke ½ teaspoon cayenne pepper 1 tablespoon real butter 1/4 cup minced white onion Salt and pepper to taste Juice of one lemon In a large saucepan, melt butter over medium heat. Add onions and cook until they're soft and beginning to brown. Slowly stir in the rest of the ingredients and cook over low to medium heat for approximately thirty minutes. Let sauce stand for ten minutes to allow flavors to meld, then stir and serve.
Bourbon Chicken Barbecue Sauce
1 ½ cup tomato ketchup 3/4 cup packed brown sugar 2 tablespoons Worcestershire sauce 2 tablespoons prepared yellow mustard 3 tablespoons apple cider vinegar 3/4 cup favorite bourbon such as Jim Beam or Jack Daniels 5 tablespoons soy sauce 1 teaspoon cayenne pepper Salt and pepper
Mix all ingredients in a medium to large saucepan. First, bring to a rolling boil, then reduce heat to low and cover. Simmer the sauce for at least thirty minutes, stirring frequently. When sauce is smooth and thick, remove from heat and allow to cool for ten minutes before serving.
Hot Apricot Barbecue Sauce
½ teaspoon dried and minced habanero pepper (or jalapeno, depending on desired heat) 1 tablespoon real butter 2 tablespoons brown sugar 4 tablespoons apricot preserves or jam 1 tablespoon white wine vinegar ½ cup water Salt and pepper Heat the water over medium heat until it is hot but not boiling. Slowly add the minced, dried pepper and allow it to distribute throughout the water. Add butter and allow it to melt, then shake in salt and pepper. Slowly stir in brown sugar, then add the preserves and vinegar. Stir the mixture over medium heat until it is thick, perfectly blended and evenly heated.

Spicy BBQ Rub

Tips for Dry Rubs:
Experiment with your own dried spices to come up with a rib rub that's uniquely yours. As a general rule, heat such as that found in red pepper is well balanced by something mellow and sweet like brown sugar or ginger. Paprika is always good in barbecue rubs, as is garlic, salt and pepper. When coating the ribs before cooking, rub the spices into the meat and cover the surface thoroughly. Let the spices set on the meat for a few hours in the refrigerator before cooking. This allows the flavor to soak in. If you find you need moisture when cooking, try brushing the ribs with honey.

Crock pot barbecue meatballs are a classic dish that work well at any dinner or gathering. Holidays are a great time to prepare this delicious yet unbelievably simple dish. Read on for our basic crockpot barbecue meatballs recipe, which can be modified to suit your own individual tastes.
For the Meatballs:
2 lbs ground beef 1/3 cup minced onion 1/3 cup rolled oats 1 beaten egg ½ teaspoon salt ½ teaspoon pepper 1 teaspoon sage 1 teaspoon rosemary
For the Sauce:
1 cup tomato ketchup ½ teaspoon mustard powder 3 tablespoons brown sugar 1/4 tablespoon Worcestershire sauce
Mix all meatball ingredients together and roll them into ball form. Place in skillet and brown the meatballs on all sides, cooking over medium heat for approximately five minutes. In your crock pot, combine sauce ingredients and mix well. Add the meatballs, cover the crock pot and cook for five and a half hours on the Low setting. Stir occasionally during the cooking process and make sure all meatballs are covered with sauce.
Variations:
There are many different ways you can prepare crock pot barbecue meatballs. Try mixing Italian sausage in with the ground beef and substituting tomato sauce for ketchup. Or go Swedish and create a creamy sauce for your meatballs from sour cream and Cream of Mushroom soup. For a little more substance, try serving your meatballs with rice or egg noodles.
If you prefer not to make your own meatballs, try the frozen kind found at the supermarket. They may not be as good as homemade, but they'll certainly do! If you like, you can bake or fry your meatballs, then freeze them for slow cooker use at a later date.
For easy cleanup, wait until your crock pot is cool then fill the inner area with hot, soapy water. Use a sponge or nylon net scrubber to scrub your crock pot – never use Brillo! If you're experiencing staining, cook water and white vinegar on the highest setting for around two hours. The stains will come off and your crock pot will look as good as new!
